Every formula in the book leans on acid to do its work, and most of the swaps below keep that mechanism intact. Where a diet takes away the thing that makes the formula work (milk protein for the cheeses, molten sugar for the candy rim), we say so plainly and offer the nearest honest workaround.
House rule for adaptation rolls. A swap you choose from one of these charts scores like an enhancement (1 point). A swap you roll for scores like a power-up (2 points). Re-rolls to dodge an allergen or a restricted ingredient are free; that is not chickening out, that is knowing your party.

Each chart replaces one component in one or more formulas. Roll the die, or choose. Tags mark which diets a roll fits; a roll with no tag fits everything the chart is for.
Diet symbols are guidance, not certification. Read labels, ask your table, and when in doubt, roll again.
